Here are recipes from one Sam and Mikaela’s favourite meals – spaghetti bolognese, salmon patties,  and chocolate chip cookies.

Mrs. Davy’s Bolognese Spaghetti Sauce

Mrs. Davy looks after Sam’s house when he’s not there and fills the fridge with meals that Sam can reheat. She makes a mean spaghetti sauce that freezes well.

 

 

2 lb lean hamburger                                 5 Tbsp sugar

2 onions, chopped                                     3 Tbsp Worcestershire sauce

7 ½ oz can tomato sauce                           2 tsp Tobasco sauce

10 oz can tomato soup                             2 Tbsp each oregano and basil

13 oz can tomato paste                           2 tsp each garlic salt and celery seed

28 oz can Aylmer’s crushes tomatoes     1 tsp pepper

3 cups water                                             5 Tbsp sugar

In large pot, sauté the meat and onion until cooked. Add all remaining ingredients and combine thoroughly. Simmer uncovered 2 ½ -3 hours, stirring often. Serve over spaghetti with Parmesan cheese.

Gluten Free Chocolate Chip Cookies

Both Sam and Mikaela love Mrs. Davy’s chocolate chunk cookies. And she makes a gluten free version too!

 

 

1 cup softened butter

1 cup packed brown sugar

½ cup granulated sugar

2 tsp pure vanilla extract

2 eggs

2 ¼ cup white rice flour

1 tsp xanthan gum

1 tsp baking soda

½ tsp salt

300g package chocolate chunks

Preheat oven to 375° F. Beat butter, vanilla and eggs until fluffy. In a separate bowl, whisk dry ingredients by hand until well blended. Add dry ingredients to butter mixture and mix until well blended. Stir in chocolate chips. Drop by heaping teaspoonful onto an ungreased cookie sheet about 2 inches apart. Bake for 8-10 minutes or until lightly browned. Transfer to wire rack to cool. Makes about 30 cookies.

 

salmon pattiesGluten-free Salmon Patties

Mrs. Davy prepares meals for Sam and leaves them in the freezer so he can heat them up after work. Here is a gluten-free version of one of his favourites. They can also be made into bite-sized portions for an appetizer.
1½ lb salmon – pureed in a food processor
100g (¾ cup) pine nuts – ground

½ cup feta cheese

¼ cup red onion diced finely

1 Tbsp. gluten-free Dijon mustard
1 Tbsp. lemon juice
1 egg
1 Tbsp. fresh dill (1 tsp dried)
1 tsp lemon zest
pepper
Combine ingredients and make patties.  Chill 1 hour (makes them easier to handle, but they still turn out if you don’t do this).  Fry (about 3 minutes per side). They can be frozen raw. Serve with a salad.
