11th Day: GF Muffins and Sophia Kimble
♪♫♪ On the eleventh day of Christmas I’m going share with you:
food to wake up to,

four frugal gifts,

and cran-nut squares that’re gluten-free. ♪♫♪
Gluten-free Almond Walnut Muffins
Need a Christmas morning recipe that you can make ahead? I bake up a batch of these gluten-free muffins and freeze them so they last longer. You could add more honey if you like your muffins sweet. They’re a bit on the pricey side because of the almond flour/ground almonds, but one muffin served with fruit and yogurt is a surprisingly hearty breakfast!
Dry:
500 g/ ~5 cups ground almonds
200 g/~2 cups walnut pieces or pecans
1 tsp baking soda
2 tsp ground cinnamon
Wet:
3 eggs – whisked
250 g (~1 cup) vanilla Greek yogurt 0% fat
2 Tbsp honey
Preheat oven to 325°F. Mix dry ingredients together in a large bowl. Mix eggs, yogurt and honey together in another bowl. Add the wet ingredients to the dry and stir just until combined. Fill baking cups with batter. (I use a silpat muffin mat so they pop out easily when they’re cooked.) Bake for 20 – 25 minutes. Makes 12 muffins. Enjoy!
