Day 6 ~ Enjoy a GF Vegetarian Recipe!

Today I’m sharing a recipe for a gluten-free vegetarian burger – delish!! Piper is vegetarian and is always looking for new recipes. Here’s a delicious burger which is high in fibre and protein. Serve on a gluten-free bun with cucumber slices, cilantro, and melted cheese. I like it with mustard, too.
Gluten-free Lentil Almond Burger
1 cup dried green lentils
227g cremini mushrooms, sliced
2 shallots, diced
2 Tbsp canola oil
1 Tbsp garam masala
1 tsp garlic powder
1 tsp ground cumin
½ tsp mustard powder
pinch salt
½ cup cilantro leaves
100g (approx. 1 cup) ground almonds
Add dry lentils to boiling water and let simmer for 15 minutes. Strain and add to food processor. In large non-stick skillet, heat 1 Tbsp oil and fry mushrooms and shallots until soft, approx. 5 minutes. Stir in garam masala, garlic powder, cumin, mustard powder, and salt and stir for 2 minutes. Add to food processor along with the cilantro and almonds. Pulse until combined. Shape into 1 cm thick patties. Heat remaining oil in skillet and fry patties until golden brown, about 2 minutes per side. Serve with gluten free buns. Enjoy!
