Day 4 of the 10-day Countdown!

It’s day 4 of the 10-day Countdown!! Dr. Brogan Corkie is sharing her recipe for chilled Roasted Peach Soup – it’s deeeeelicious!

Don’t Mess with Christmas is Book 4 of the Dr. Brogan Corkie Matchmaking Doctor series ~ happily-ever-after sweetness! November 2nd is the big day. Woohoo!

Chilled roasted Peach Soup

4 ripe large peaches, peeled, halved, and pitted

1 ½ cups granulated sugar

2 cups peach nectar (plus more if needed to thin)

1 star anise, cracked

1 vanilla bean, split

juice of 3 oranges (roughly 1 cup)

juice of 1 lemon

2 sprigs fresh mint

  1. Preheat oven to 400°F (200°C). Lightly coat a baking sheet with butter. Place the peach halves, cut side down, on prepared baking sheet. Sprinkle peaches with ½ cup sugar and bake for 15-20 minutes until well roasted.
  2. Transfer peaches to a food processor, along with any drippings from the baking sheet. Puree until smooth, stopping 2-3 times to scrape down the sides. Transfer to a large nonreactive bowl and set aside.
  3. In a small nonreactive saucepan, combine peach nectar, remaining sugar and star anise over medium heat. Use the tip of a blunt knife to scrape the vanilla bean seed into the mixture. Bring to a boil and then remove from heat. Let syrup infuse for about an hour in a warm place. Strain through a fine sieve into a nonreactive bowl and add citrus juices.
  4. Tasting as you go, slowly add the peach syrup to the peach puree until desired flavour is achieved. If the soup is too thick, thin it with a little plain peach juice. Cover and refrigerate until completely cool.
  5. Serve in chilled bowls and garnish with mint. Enjoy!

Dr. Brogan Corkie is happily semi-retired from medicine and now has time for other hobbies. Her passion for food is second only to her skill at matchmaking!

Parker Roy grew up in the middle of four brothers and has lived with enough testosterone to last her a lifetime. She’s finally moved out and made a life of her own. Between putting the finishing touches on the set for Mapleton’s Christmas play, plowing snow, and transforming her hydroponic greenhouse into a Christmas wonderland, it’s ramping up to be a hectic season.

Dr. Julian Murphy, the only allergist in town, has his eye on the woman behind the set design of the holiday play. He’s volunteering backstage in the hope of getting to know her. There’s a bit of a snag when she’s referred to his clinic for a rash – doctors aren’t allowed to date their patients – but Dr. Brogan Corkie doesn’t see it as an insurmountable problem and steps in to give their romance a nudge. She’d better be right because, if not, it could seriously mess with Christmas.

The allergist or the rash– which itch does Parker want to scratch?
